Colorado Peaches Two Ways

When I was making these two recipes, I found myself singing that song and wondering if the Steve Miller Band wrote it about Colorado. I know. Colorado may not be the first state that comes to mind when you think about peaches, but that’s because you’ve never tasted their freestone Palisade peaches.


The Grand Valley’s hot days and cool nights are perfect for growing some of the best peaches in the world. Harvested in the fall, the temperatures bring out the natural sugars, making them sweet and loaded with chin-dripping juice.


Their season is short, so make the most of it by serving these two amazing recipes. Having grilled pork? Pair it with grilled Colorado Peaches. Then, top off the meal with a dessert of Colorado peach cobbler. Remember to end the night with Name’s tradition, the Colorado Bulldog!


Grilled Colorado Peaches

 

Ingredients for 6 servings | Multiply by degree of hunger and divide by number of girlfriends!


6 peaches, preferably freestone

Olive oil


Step 1

Prepare the grill by turning to medium heat. 


Step 2

Halve and pit the peaches. Run a sharp knife along each peach's seam to halve them. Remove the pit and brush each cut side with olive oil.


Step 3

Place the peaches on the grill, cut-side down (If you're using charcoal, grill the peaches after everything else has been prepared.) Cook undisturbed until grill marks appear, 4 to 5 minutes. 


Step 4

Flip the peaches and cook until tender, 4 to 5 minutes. 


Step 5

Flip again and grill until the skins are charred and the peaches are soft, 4 to 5 minutes more.


Step 6

Remove from grill. Serve as an accompaniment to grilled pork.

Colorado Peach Cobbler

Ingredients for 8 servings | Multiply by degree of hunger and divide by number of girlfriends!


Filling:

1 cup sugar

2 tablespoons all-purpose flour

1/4 teaspoon ground nutmeg

4 cups sliced peeled fresh peaches


Topping:

1 cup sugar

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/3 cup cold butter

1 egg, beaten

Ice cream, optional


Step 1

Preheat oven to 375°.  Grease 11” x 7” baking dish. 


Step 2

In a large bowl, combine sugar, flour, and nutmeg. 


Step 3

Add peaches; stir to coat. 


Step 4 

Pour mixture into baking pan.


Step 5

Prepare topping by combining sugar, flour, baking powder, and salt in a small bowl. 


Step 6

Cut in the butter until the mixture resembles fine crumbs. 


Step 7

Stir in egg.


Step 8

Spoon over peaches.


Step 9

Bake for 35-40 minutes or until filling is bubbly, and topping is golden. 


Serve hot or cold with ice cream if desired.
